WINE.
This
delightful
beverage
is
prepared
in
the following
manner
:
—
Take
12
oranges,
and
pare
them
very
thin
strain
the
juice,
so
that
none
of
the seeds
go
in
with
it.
Then
take
6
pounds
of
loaf-sugar,
and
the
whites
of
2
eggs,
well
beaten;
put
these
into
3
gallons
of
spring-
water,
and
let
it
gently
boil
for
half
an
hour.
As
the
scum
rises,
take
it
oflF;
then
add
the
orange-juice
and
rind.
Three
or
four
spoonfuls
of
yeast
must
also
be
put
in/
and
let
it
stand
in
a
pan
or
pail
for
four
or
five
days
then
put
it
into
the
cask,
and
let
it
stand
for
three
or
four
weeks,
but
do
not
stop
it
close
for
the
first
week.
When
nearly
fine,
draw
it
off
into
another
cask,
and add
to
it
a
quart
of
white
wine
and
a
little
Cognac
brandy.
Stop
it
close,
and
in
a
month
or
six
weeks
it
will
be
in
fine
condition,
ready
for
use.
SIMPLE
LAVENDER
WATER.
For
many
years
this
has
been
a
great
favourite
;
it
is
easily
made
in
the
following
way
:
—
Take
14
pounds
of
lavender-flowers;
10^^
gallons
of
rectified
spirits
of
wine;
and
1
gallon
of
water.
Draw
off
10
gallons
with
a
gentle
fire,
or,
which
is
much
better,
the
sand-bath.
