THEORY
1. VitaminK
1
(also known as phylloquinone and phytonadione) occurs naturally in the trans form as
yellow viscous oil. During synthesis of vitaminK
1
both the cis and trans isomers are formedwith the
trans isomer being themajor product. VitaminK
1
is insoluble inwater and sparingly soluble in
methanol and ethanol. It is soluble in vegetable oils andorganic solvents such as pentane, hexane,
isooctane, and 2-propanol. Themeltingpoint of vitaminK
1
is -20
C and itsmolecularweight is
450.71. VitaminK
1
has 5 ultraviolet absorptionmaximumwhich are at 242, 248, 260, 269, and 325
nm. VitaminK
1
is stable to air, heat, oxidizing agents, andmoisture, but its activity is destroyed by
light (especiallyultraviolet radiation), reducing agents, and alkalies.
2. Good sources of vitaminK
1
are alfalfa, cabbage, cauliflower, green vegetables, tomatoes, cheese, dairy
products,meat, egg yolks, and canola and soyoil. VitaminK
1
is also found in bacteria and is
synthesized in the intestinal tract bymicroorganisms. Trans vitaminK
1
is biologically activewhile the
cis form has little, if any, activity.
