WHITE WINE WHEY, OR Ml LK

POSSET.

Put on€ pint of milk into a sauce pan, and

when it boils pour into it one gi ll of white

wine ; boil it till the curd becomes hard

then strain it through a fine sieve; rub

few knobs of loaf sugar on the

rind

or

a

l emon, put them into the

°"' h ey;

grate

a

small quantity of nutmeg i11to it; sweeten it

to your taste, and it is fit for use.

PEPP.ER POSSET.

The more to promote perspiration, ·whole

pepper is sometimes boiled in the "Whey, but

all-spice is far preferable.
