COCKTAILS.

The cocktail is the most popular

drink in America today, and, if prop

erly mixed, is the most palatable of all

beverages. It should always be taken

before meals, never after eating. The

secret of mixing a good cocktail is in

having it properly chilled. Put a large

lump of ice in a clean cloth bag (a

large money sack is the best) and

pound it with a stout piece of wood un

til reduced to about the size of cube

sugar. Fill the mixing glass with this

ice, then pour in the required ingredi

ents. Use a bar spoon with a twisted

handle; work the spoon up and down,

the handle resting lightly against the

rim of the mixing glass; and the vibra

tion in this method of stirring (or

churning, as it might properly be

called) will quickly chill the contents,

and only a small portion of the ice will

be dissolved. This churning process.
