Take
the
whites
of
fifteen
or
twenty
eggs
for
a
pipe
of
wine,
beat
these
up
into
a
froth,
and
mix
in
the
same
manner
as
for
the
white
wines.
There
are
other
modes
of
fining,
but
these
are
best
understood
by
the
wine-merchant;
in
fact,
when
wine
requires
fining,
it
is
always
better
to
entrust
the
operation
to
some
experienced
cooper
or
cellarman
