BRANDY
is
an ardent spirit, distilled from wine, possessing
peculiar properties, taste, and flavor,-subject
to son1e variations arising from different growths
of the vine, which are readily recognized by
experienced dealers. Its odor is agreeable,
vinous, and aromatic. Its taste, and, in a
great measure, its flavor, being due to a minute
portion of volatile oil.
The varieties of brandy are numerous, their
.., names generally being an index to their qual–
ities or sources whence derived. Each variety
has numerous marks. For instance, Cognac
