1 spoonful lime juice

cracked ice and water.
ORGEAT. (Horchata).
This is very different from the
orgeat made with syrup of almonds. It
is the genuine milk of almonds we used
to read about.

ounces blanched almonds pounded
to a pulp in a mortar or very £inely ground,
are worked with a heaping tablespoonful
of sugar and water enough· to make one
l;rge glassful. added very gradually.
This is strained and cooled with ice.
COCONUT WATER
Only young, green coconuts have
the necessary liquid. But a medium
sized one will give two large glasses of
delicious water which needs nothing more
than the addition of a little ice to be
perfect. Sometimes a teaspoonful of
sugar ,enhancei; the taste, but generally
the juice is sweet enough without it.
Coconut water is considered a won–
