Preparation of Vegetables
Vegetables are quickly and safely cleaned
by this simple method:
Put a handful of ordinary salt in a dish-
pan of cold water and let the vegetables
stand, uncut, in it for twenty minutes. Re
move any insects. The few drops of lemon
juice you always have in your fruit cup will
destroy any germs. Rinse, cut out any
spoiled portions. Use the whole vegetable.
Leaves,skin and roots contain valuable min
erals.
Be sure not to cut the vegetables before
cleaning,because salt water would leech out
the mineral elements in them.
