TAMAL EN CAZUELA. (Soft tamal)
This delightful dish is made vvith
fresh corn which must be harder than
that which is eaten on the cob. The very
young green corn is too vvatery and does
not contain sufficient starch to thicken.
15 ears of corn
1
lb. lean pork
juice of one sour orange or 2 limes
2 kernels of g'arlic
2 onions
'
4 or 5 tomatoes
1 green pepper
1 spoonful chopped parsley
