Wint er Cordials
Archbishop
Stick an orange full of cloYes and roast it before
the fir e or in the oven. When bron-n, cut it
into quart ers , r emove the pips, and put into
a stewpan.
Pour over it a bottle of claret, add sugar to
tast e, and let it simmer for fift een minutes.
Strain, and serve.
Bishop
Bishop is made in the same way as Archbishop,
but port is used inst ead of cl are t.
Cardinal
Cardinal is the same as Archbishop, but
champagne is substituted for clare t.
