SUMMER DRINKS

English Rum Shrub.

Pour three gallons of best Jamaica rum on a

quart of orange-juice, a pint of lemon-juice, and

the peels of the latter fruit cut very thin, with

six pounds of icing sugar. Cover over tightly

for one night; then boil three pints of fresh

milk, and when cold pour it into the spirit and

juice. Mix the whole well together, let it stand

for one hour, filter through a flannel bag lined

with blotting-paper into bottles, and cork

directly.

Raspberry Shrub.

Let three quarts of ripe raspberries stand in

one quart of vinegar for a day, then strain it,

adding one pound of sugar to every pint; then

boil for half an hour, skimming it clear, and

add a wineglass of brandy to each pint of shrub

when cool.

Two spoonfuls of this shrub mixed in a

tumbler of water is an excellent drink in hot

weather, or for fever patients.

Rum Shrub.

Mix in a cask one gallon of rum, one pound

of loaf sugar, and three pints of orange-juice.

Leave for six weeks, when it will be ready for

use.
